Honey Rice Bubble Slice

This no-bake Honey Rice Bubble Slice is an old recipe and a family favorite, taking only 5 minutes to make and 5 minutes to set. No baking required - how easy does that make it?


The recipe was also one of my Nana’s go-to recipes. 


It’s an inexpensive recipe that children are guaranteed to love, and who doesn’t have some Rice Bubbles in their pantry? To make it versatile, this no-bake slice using Rice Bubbles is a great last-minute addition to a children's lunchbox, or you can vary it by adding different flavors and treats. My daughter often makes it and adds a large chocolate button to the middle of each cut piece of slice. I use a standard slice tray (35 x 24.5cm), which I line with baking paper. I love it with dried figs that complement the nutty taste of the toffeed honey. The Honey Rice Bubble Slice featured in this blog has the chopped dried figs in it.


Using the mentioned slice tray size, you should get about 18 squares. Store them in an airtight container in the pantry.


Ingredients:


  • 125g butter

  • 1 cup sugar

  • 4 cups Rice Bubbles

  • 3 tablespoons of honey


Method:


  1. Prepare a medium slice tin with baking paper.

  2. Put the Rice Bubbles in a bowl.

  3. In a saucepan, melt the butter, honey, and sugar together.

  4. Bring the mixture to a boil without stirring it. Cook for approximately two minutes until the color changes, and the mixture starts to get tacky like toffee.

  5. Tip the hot mixture into the Rice Bubbles and mix immediately until the liquid coats the Rice Bubbles completely. Be quick, as it will start setting quickly.

  6. Tip into the prepared slice tray.

  7. Using a large dry spoon, flatten out the mixture and press it down into the tin until level.

  8. Leave it to cool, then cut it into slices.

  9. Store at room temperature. The slice will last about two weeks.


Variations:


There is enough liquid in this mixture to add extra ingredients. I often add 1 cup of chopped dried fruit, such as apricots, figs, or sultanas, or try a mixture of roasted nuts, pumpkin seeds, or coconut. A favorite for the kids is M & M’s or chocolate buttons. If you are adding other treats to the slice, mix them well with the Rice Bubbles first so that they are well mixed before you add the liquid, with the exception of chocolate - just leave that to sprinkle over the top.
