Louise’s Green Salad Dressing

This is my version of a Green Goddess Dressing, but with a few extra ingredients to make it nice and tasty.

I use this on everything – as a salad dressing, a spread on toast, or a delicious dip with cheese and crackers.


It has a great shelf life, lasting a couple of weeks in the refrigerator, and it can also be frozen.


Ingredients:


  • 1 avocado

  • ½ finely diced brown onion

  • 2 tbsp finely chopped parsley

  • ½ tin of sweetened condensed milk

  • 2 handfuls of fresh baby spinach

  • 2 cloves of garlic or 2 tbsp crushed garlic

  • ½ cup of cider vinegar

  • Juice of one lemon

  • Salt and pepper to taste


Method:


Using a long stick blender mix all the ingredients together except the spinach which needs to be added into two separate handfuls until you get a fine green mixture. Taste and adjust the vinegar, salt, and pepper to suit.

Makes approximately two cups of dressing.
