Veronia Gibbs Family Date Slice Recipe

Veronia had a small corner bakery in Wauchope NSW and was famous for her Date Slice. She used to say it was her best seller and anyone buying it would always come back for more. Veronia has since passed but her Date Slice Recipe is alive and has been well used throughout her friends as she made no secret of what the recipe was and was always happy to share it when asked. She was such a lovely businesswoman, mum, friend, and community member who was taken too early and is sadly missed.


I recently got the recipe from my friend and Veronia’s good friend Peta, who always has it made in the pantry to give to visitors. Once hooked – it’s hard to go back. It’s quick and easy to make – so enjoy.


Ingredients:


  • 2 cups oats

  • 2 cups chopped fresh dates

  • 1 cup desiccated coconut

  • 1 cup self-raising flour

  • 250g melted butter

  • 2 tablespoons honey

  • 1 cup brown sugar


Method:


  1. Preheat the oven to 180 C. Grease a standard slice tin.

  2. In a bowl, mix the dry ingredients, then add the chopped dates.

  3. In a separate pot, melt the brown sugar, butter, and honey together until it’s well-mixed. Pour this mixture into the dry ingredients and mix well.

  4. Tip the mixture into the slice tin and press down firmly.

  5. Bake for 20 minutes.

  6. When cool, drizzle with some lemon icing, cut into squares, and serve.


Store in a plastic container in the pantry.
